Weekend Treat | My Perfect Brownie Recipe

It's quite bold of me to claim this recipe as 'mine' in the title - because {confession} it isn't my recipe at all! It's my cousins and she has graciously given me permission to share it with you today {thank you, Lian}.

I have however been baking this recipe since my late teens, and if you invited me to dinner or an event within the last 12 years I undoubtedly would have brought along a tray of these. They are moist and fudgy and waaaay easier than my old recipe which required creaming the butter and sugar. They are also all thrown together in a pot - which makes clean up easy too.

Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 1 cup flour
  • 2/3 cup cocoa
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup white chocolate buttons
  • 1/2 cup dark chocolate chips

Instructions

  • Melt the butter in a medium sized pot, stirring occasionally as it melts. Remove the butter from the heat.
  • Stir in the sugar and mix in the eggs.
  • Add the dry ingredients {sifting optional}, mixing well until the batter is glossy.
  • Lastly add the chocolate chips and give it one last stir to evenly distribute the chocolate.
  • Spread into a lined 13 x 9 pan. 
  • Bake at 180 degrees C for 25 minutes or until a toothpick inserted comes out with a few sticky crumbs.
  • Cool in the pan for 10 minutes before transferring to a wire rack.
  • Sprinkle with icing sugar before serving. Best served warm with ice cream.
